I’m with ya.  It took me a while to learn to cook the whole chicken.  I mean, boneless chicken breasts are just so easy to cook up.  But I’d love for you to just try cooking a whole chicken first.  If you have an Instant Pot, it’s the easiest thing in the world.  You throw the whole bird in there with some water, aromatic veggies, simple seasonings and the meat becomes soooo juicy!  You can take the meat off the bones and cook the bones and skin a little longer to get the nutrients fully out, if you want, or just cut up the meat, ladle in the golden broth, add some frozen veggies and/or noodles.  You’ll have the most divine chicken noodle soup you’ve ever eaten!  If you just get the chicken breasts to cook, you are missing out on the rich, comforting, nourishing and healing chicken broth.  (It’s beyond anything on the grocery store shelf.)  Meat or bone broth can be used as the liquid in cooking rice or other savory recipe.  The Instant Pot is my best friend.  I typically just throw the whole frozen bird in sometime in the late afternoon and have a gorgeous and tasty meal by dinnertime.  Slow cookers are also super handy to have and fill your home with a delicious, enticing smell.  Air fryers give a nice, crisp skin.  I’m working on compiling all of my favorite recipes.  And by favorite, I mean quick, satisfying and kid-approved.  🙂
