This depends on the time and equipment you have available and the meal you are wanting to make.  Our customers have told us they use air fryers, crock pots, Instant Pots, the oven and stock pots on the stove.  As a busy mom who just needs to get a quick and nutritious dinner on the table, I throw a frozen chicken into my Instant Pot with some water, spices and aromatic vegetables.  Comforting chicken noodle soup is ready in no time without the need to thaw.  If I’m making a special dinner for company, I will brine the whole chicken, cut up root vegetables, coat the veggies in oil (I prefer a high-heat oil like avocado, almond or lard), place the patted dry chicken on top and roast in the oven.  To finish off the presentation, I coat the chicken with butter and broil to crisp up the skin.  The flavor and texture of the roasted pastured chicken will get you rave reviews!

An important thing to realize about pastured chicken direct from a farmer is that it is not “enhanced with a solution” like the chicken you find at the grocery store.  This retained water of 1-15% of the weight can make it more moist, but you are paying a premium for that salt water (and sometimes other not-so-good ingredients).  So if you will be barbequing or roasting your chicken, I highly recommend brining your chicken first!
